The engine will run at the temp the cooling system can maintain, period. Unless your cooling system can maintain a lower temp than the thermostat rating, then it will run hotter then the cooling system is capable of (since the thermostat rating is a higher temp than what the cooling system can maintain), but that would be an unusual situation.
